Make ahead and you'll have soup on hand whenever you're hungry for it. Substitute butternut squash, or even canned pumpkin puree (see recipe for substitution information). Creamy and delicious without the dairy. Don't be daunted by the long list of ingredients. It's mostly spices that you likely have on hand!
